March [Crockpot] Madness ; Day 2

Today we completed day two of our Crockpot Madness Challenge. We decided to make our Chicken Tikka Masala because it is one of our personal favorites. We absolutely LOVE Indian food in our household (the spicier the better) and when we started Crock'n CLE we knew we wanted Indian dishes in the mix. With having 3 kids we knew we couldn't make it spicy, but you can have complete control over the heat level with this dish! 



Starting our business during COVID made things a little strange to begin with, but by the time we were 2 months into it outdoor markets started happening again. We jumped on the opportunity to do them because it allowed us to market to a whole new demographic. At one of our earliest vendor markets we met a gentleman named Mike who told us about all his travels to India for work. He bought this meal packet to try and told us he would report back. The following week he came to our vendor event JUST to tell us how authentic this meal is. He said it is the most comparable Tikka Masala he has had since he was in India. 



This meal is SUPER quick to throw together (it literally takes seconds) and is so good over some rice with a side of naan! We threw this together today 10 minutes before we had to run out the door to get our daughter from school. We spent the afternoon with her getting some one on one time (without her brothers) and had a great afternoon as a family of 3! By the time we got home around 7pm dinner was done, we just had to make the rice. Talk about simple. 



This recipe uses:
2lbs boneless chicken (breasts or thighs)
1 Crock'n CLE Packet
1/4c Water
2tbsp Tomato Paste
1 Can Diced Tomatoes (undrained)
1/4-1/2c Heavy Whipping Cream (or Plain Non-Fat Greek Yogurt) 

I guarantee you already have most (if not all) of this in your kitchen. This meal is the epitome of "dump and go". Add your chicken, water, packet, diced tomatoes & tomato paste - turn on the crockpot for 4-5 hours on high or 6-7 on low and thats it. When the cooking time is up stir in your heavy whipping cream and dinner is done!
