Crockpot Directions

Place chicken or pork in crockpot. Add seasoning packet, Rotel, and salt. Cover. Cook. Shred meat in the crockpot. Prepare cornbread mix according to package directions. Pour batter evenly over the shredded meat. Cover and cook on HIGH for 1 additional hour until cornbread is set.

Alternative Cooking Method

Oven: Cook and shred chicken or pork with packet and Rotel. Pour into a greased baking dish. Prepare Jiffy cornbread mix and pour evenly over the top. Bake at 375°F for 25-30 minutes until cornbread is cooked through and golden.
